Part One: Learn about a way of eating that IS NOT sustainable. Answer the question: "How do I participate as a consumer in the industrial food production system?" Meet the 3 principles of "eco-negligent" eating, which "starve" your innate eco-intelligence. Examine the way in which
eco-negligent eating undermines our personal, social, cultural, and environmental health. Assess how you, and others, use food and agricultural choices to disintegrate (the needs of) your personal and planetary ecology.
Part Two: Discover a way of eating that IS sustainable. Answer the question: "How do I participate as a consumer in the organic food production system?" Meet the 3 principles of "eco-intelligent" eating which serve to "feed" and "nourish" your innate eco-intelligence. Examine the way in which eco-intelligent eating supports your personal, social, cultural, and environmental health. Explore how you, and others, use food and agricultural choices to integrate (the needs of) your personal and planetary ecology.
Part 3: Examine a familiar paradigm for nutritional knowledge: the U.S.D.A.'s Food Pyramid and MyPlate Eating Models. Investigate the unhealthy, abusive, and destructive methods that are used in the production of plant and animal foods alike, which deposit chemicals, drugs, hormones, and genetically modified organisms into animals, plants, ecosystems, your body, and the Earth.
Part 4: Explore the Eco-Intelligent Eating Model. Make an acquaintance with the Earth's traditional whole foods. Get acquainted with their ecological origin, history, nutritional benefits, and creative recipe uses. Discover the world of ancient grains and get tips on how to cook them. Learn about nuts and seeds, as well as the oils they contain, and how to store them for maximum freshness. Get inspired to make non-dairy milks. Learn why organic, grass-fed eggs, fish, and meat, can be part of a sustainable diet, if they are free of hormones and GMOs. Get familiar with delicious, sustainably produced sweeteners such as maple syrup, barley malt syrup, date sugar, birch tree sugar, and others. Discover the medicinal properties contained in organic herbs and spices. Learn why it’s essential to drink pure water, and eat green super foods, too!
