Elmhurst Dairy, provider of milk for New York City public schools, is shutting down after 100 years in business, citing a drop in demand for conventionally produced cow’s milk. In its heyday, Elmhurst Dairy processed nearly a million and a half gallons of milk a week. But these days, because of changing trends (including consumer awareness of the treatment of cows in the milk industry, as well as consumer concern about rBGH hormones, vet drugs, and environmental pollution), sales have seriously tanked. Elmhurst has decided they will cash in on dairyless alternative market, which is set to reach a staggering $21.7 billion within the next six years.
