I’ve Tossed A Lot of Gluten-Free Breads

I don’t know about you, but I’ve tossed out more wheat-free, gluten-free breads over the years than I care to count. I’m not even sure the squirrels in my backyard have bothered to eat the remnants that I’ve tossed. What Are Most of the WF GF Breads Made from Anyway?


The fibrous, wheat free, gluten free bread brands often boast in their advertisements that they are prepared from dozens of grains and seeds, some of which are sprouted. Unfortunately, many of them end up with a rubbery texture that resembles amalgamated sawdust.


The starchy white gluten-free and wheat-free bread brands, on the other hand, are usually prepared with just one grain, such as processed rice, which is then turned into a bread like amalgam using tapioca starch, as well as gums and fillers are added. Unfortunately, these types of starch are famous for elevating blood sugar in the body, which, in turn, can lead to body wide inflammation, and even weight gain around the middle!

Simple Kneads (I love the company’s name!) was created by a man named Tristaun Le Claire, a whole foods expert, whose son developed an allergic reaction to gluten when he was a young child. Like me, and many others, Tristaun was frustrated by the lack of healthy, good tasting wheat-free gluten-free breads sold in grocery stores and coops in the US, and he set out on a mission to create one. Lucky for you, and me, and the rest of the population, he created not just one, but three artisan style multi-grain breads, including a Sourdough bread, a Quinoa Power Grains bread, and a Pumpernickel bread.

Real Ingredients, Real Bread, Real Delicious!

Each of the three breads has something in common with the others. They are all made from a skillfully blended combination of millet, sorghum, buckwheat, quinoa, and teff flours. These are the ancient super food grains that have a rich a history of nourishing people and cultures around the world for centuries. The breads are fortified and texturized with flax seeds (which are a rich source of fatty acids), sunflower seeds, (which supply protein) and psyillum seed (which adds fiber and moisture to the bread.) There are no eggs or fillers in the bread, only sunflower seed oil, along with a hint of sea salt, herbs, and raisin juice. A single slice has around 90 "healthy" calories.
